The Not Co is a startup that makes vegan food using machine learning. Located in QuilĂn, Santiago de Chile, The Not Company combines molecular biochemistry, food science, and artificial intelligence to generate recipes that match the flavor, scent, and textural profiles of traditional foods (those that use dairy, eggs, and meat) but that are made solely of plant-based products. I worked in their Machine Learning Research Group. My project was focused on natural language generation and entailed many hours of coding.
